What is Tap,Rack and Brew?

Tap, Rack & Brew is more than a business it’s a community ecosystem built on service, connection, and empowerment. It’s a one-stop hub for training and growth that brings a coffee shop, Jiu-Jitsu academy, tactical training center, and classroom space together under one roof. Our mission is simple, to build stronger families, smarter leaders, and safer communities.

In partnership with the Jorge Pastore Foundation, Tap Rack & Brew will provide sponsored tactical and medical training for law enforcement and first responders, continuing Jorge’s legacy of service and excellence. Alongside the We The People Jiu-Jitsu & Judo Homeschool Program, we’ll also create a co-op and community hub for homeschool families, giving kids and parents a space to train, learn, and grow together.

Inside the facility, we’ll include a dedicated classroom where homeschool students can do schoolwork together, collaborate on projects, and take part in enrichment programs that teach leadership, teamwork, and life skills. Parents can relax or connect in the coffee shop while their kids study or train just a few steps away fostering a true sense of community and shared purpose.

When the tactical training center isn’t being used for first-responder courses, it will open to the public for civilian tactical and emergency medical classes, empowering everyday citizens with life-saving skills. The space will also be available for birthday parties, airsoft events, and private rentals, ensuring it stays active and accessible year-round.

Tap Rack & Brew will operate as an eco-system of local partnership where sponsors and community supporters are directly connected to members. Each monthly membership will include discounts not only at Tap Rack & Brew’s gym, training center, and coffee shop, but also with participating sponsor businesses such as chiropractors, fitness studios, and local retailers. It’s a model where everyone wins, businesses grow, members save, and the community strengthens.

The vision doesn’t stop there. Tap Rack & Brew will also serve as a platform for youth development and entrepreneurship. Homeschool students will have the chance to gain real world experience by working shifts in the coffee shop, learning responsibility, teamwork, and business operations. Students in our entrepreneurship program will be able to create and sell their own products directly through the storefront turning ideas into real opportunities.

Tap Rack & Brew isn’t just a place to train it’s a place to belong. It’s where families, first responders, and community members come together to support one another, learn valuable skills, and build a stronger future.

Meet The Founders

Danny Hill

Founder of Tap Rack and Brew

Danny Hill is a husband, father, career firefighter, tactical medic, Jiu-Jitsu purple belt, firearms instructor, and Rescue Task Force team leader with nearly two decades of frontline experience. He has led during critical incidents, teaches CQB, Tactical medicine, active shooter response, and trains first responders and civilians to operate decisively under pressure.

As founder of Tap Rack & Brew, Danny is building a community where families train together, first responders are supported, and the next generation is mentored with real-world skills, discipline, and purpose. His mission is simple, raise capable leaders, strengthen families, and create safer, stronger communities through preparation, connection, and service.

Kim Pastore

Founder of Jorge Pastore Foundation

Kim Pastore is the founder of the Jorge Pastore Foundation, created to honor the legacy of her late husband, Jorge, who was tragically killed on 11/11/23 during a SWAT hostage rescue operation in Austin, TX. Jorge lived a life of service from his career as a firefighter and paramedic in Florida to his dream role on the Austin SWAT team. His passion for training, improvement, and helping others are the pillars on which JPF is built. The foundation provides no-cost training and grants for first responders, along with wellness programs for both first responders and veterans. Kim brings her background in business development, leadership, and philanthropy to drive the mission forward, turning her pain into purpose by improving the lives of the men and women who selflessly serve and protect.

Professor Craig Chavez

Founder of We The People Jiu Jitsu & Judo Homeschool Program

Professor Craig Chavez- Husband, father of 4 and combat veteran began training Mixed Martial Arts in 1999 and went on to serve honorably in the U.S. Army during Operation Iraqi Freedom becoming a recipient of the Purple Heart. After his military service, he became a 2x National Silver Medalist in Judo, a former member of Team USA Judo, and a black belt in Brazilian Jiu Jitsu, Judo, and Hapkido, certified by the Jiu-Jitsu Global Federation under GM Rickson Gracie. Craig has also served in intelligence with the Department of Homeland Security and the Texas Department of Public Safety. Specializing in tactical and close-quarters training for military and working with law enforcement, he founded We The People Self-Defense Systems, a Homeschool Program and adult JJGF-certified academy, to provide community with martial arts, discipline, and resilience and to support veterans and first responders through training that promotes healing, emotional regulation, and readiness.

How Your Support Brings This Vision to Life

Tap Rack and Brew is being built with intention, phase by phase to ensure long-term impact and sustainability.

Phase One: Securing Land

Our first priority is securing land in the Spicewood, TX area either through a land donation or by raising the funds needed to purchase property. This step creates the foundation for everything that follows.

Phase Two: Jiu-Jitsu Academy & Classroom

Once land is secured, we will immediately build the Jiu-Jitsu academy and classroom space, allowing us to move out of our current rental, expand our programs, and serve more kids, families, and homeschoolers.

Phase Three: Coffee Shop & Community Hub

The coffee shop will serve as the heart of Tap Rack and Brew a place for connection, collaboration, and community support, while also creating sustainable revenue to support the mission.

Phase Four: Tactical Training Center

The final phase adds the tactical training center, expanding civilian education and providing sponsored high-level training to law enforcement through our partnership with the Jorge Pastore Foundation.

All donations (including land) toward the Tap Rack and Brew project are tax-deductible through our nonprofit partnership with the Jorge Pastore Foundation, allowing supporters to make a meaningful impact while helping bring this vision to life.
